My latest food experiment - Il mio piu` recente esperimento culinario

I am going to pretend that it's not true that I haven't blogged in 6 months and just dive right in to show you my latest concoction. I realize the colors are rather unappetizing, but believe me it's good! I only make these really strange experiments for myself, for guests I stick with experiments that are more likely to succeed. So.....
First I made a pot of lentils with the usual carrots, onion, laurel leaf, etc, etc.  When they were cooked I removed the extra 3 cups of liquid and placed it in another pot with additional water. In it I cooked pearled barley. I removed the barley and added "olive leaf" fresh pasta. When the pasta was done, I added a large tablespoon of Onozaki rice miso and let it dissolve. The broth is creamy and tasty and it was delicious, honest!

Faro` finta di non aver abbandonato il blog per 6 mesi e mi ci tuffo direttamente dentro, come se niente fosse, per mostrarvi il mio ultimo inciucio. Mi rendo conto che i colori non lo rendono molto appetibile, ma credetemi, e` buono! Questi strani esperimenti li faccio solo per me, per gli ospiti mi attengo ad esperimenti con piu` probabilita` di successo. Allora....
Prima ho cucinato delle lenticchie con le solite carote, cipolla, alloro ecc. Quando erano cotte ho tolto quasi un litro di liquido in eccesso e l'ho messo in un'altra pentola, aggiungendovi dell'acqua. In questo liquido ho cotto dell'orzo perlato. Quando l'orzo era pronto l'ho tolto dal suo liquido ed in questo stesso liquido ho messo della pasta fresca formato "foglie di ulivo".  A cottura ultimata vi ho sciolto un cucchiaio da tavola abbondante di Onozaki miso di riso. Il brodo e` cremoso e saporito. Non me l'aspettavo cosi` buono! Sul serio.

Fava greens and blossoms - Foglie e fiori di fave

Yesterday, through a Facebook post by an Italian friend who has a restaurant in San Francisco, I made an interesting discovery - that the tender leaves and blossoms of fava plants can be eaten raw or lightly cooked. I had no idea. I have quite a few fava plants growing right now, some of which I plan to "chop and drop" as green manure and some of which I will allow to bear fruit. I love raw and cooked young fava beans, so knowing that I can eat parts of the plants I will sacrifice as fertilizer, even though they will not have produced beans, somehow feels less wasteful. 
I found recipes in English herehere and here, and in Italian just this one.  
Today I ate the most tender tops and the flowers raw with olive oil and vinegar, I threw a few in the water in which I was cooking pasta, for the last two minutes of cooking time, and both ways were excellent. Tomorrow I plan on lightly sauteing the larger leaves. 
Ieri, tramite il post di un amico italiano che ha un ristorante a San Francisco, ho fatto una scoperta interessante -  che si possono mangiare le cime e i fiori delle fave, sia crude che cotte. Non ne avevo idea. Ho parecchie piante di fave nell'orto, alcune che ho intenzione di tagliare a pezzi e usare come concime "verde" e alcune che lascero` in produzione. Mi piacciono molto le fave fresche crude o cotte, quindi sapere che posso mangiare anche alcune parti di quelle piante che sacrifichero` come concime, mi fa piacere. Ho trovato varie ricette in inglese (vedere i link sopra), ma solo questa in italiano
Oggi ho mangiato le cime piu` tenere e i fiori in insalata condite con olio e aceto, ho buttato alcune delle foglie piu` grandi nell'acqua di cottura della pasta, per gli ultimi due minuti di cottura, e mi sono piaciute in entrambi i modi. Domani ho intenzione di saltare velocemente in padella alcune foglie piu` grandi.

Mi diverte proprio scoprire nell'orto cose nuove da mangiare!

Vegetarian Cabbage Rolls

Let me say right off the bat that this is a very approximate recipe, and since I made it up as I went along there are no precise measurements. I made four large rolls on the stove top and ate two before I even thought of taking a photo. They are good!
I used a variety of cabbage that here is called "Cavolo Verza Riccio" and it is the one in the third photo from the top here. It's the cabbage I've been using since I arrived here and I really like it.
This is what I did:

1. I boiled some generic variety of white short grain rice (not Basmati, not Arborio).

2. I briefly sauteed onions, garlic and a tiny bit of red pepper flakes and to this I added a can of chopped tomatoes and their sauce, 3 bay leaves, and salt. When the sauce was partially cooked I added some sliced white mushrooms and let them cook.

3. In the meanwhile I placed the four large outer leaves of the cabbage, from which I had pared away the toughest upper part of the stem, in boiling water - one at a time - for a minute or so, then let them drain.

4. I mixed the rice with a couple of eggs, grated Rodez cheese (you can use Parmigiano or Pecorino), some diced provolone (mozzarella would be good, but I didn't have any), a bit of the sauce (onions, garlic and all), and a pinch of cumin. Since I decided to add the mushrooms as an afterthought, they did not go into the rice mix, but it would have been even better with them in there.

5. I placed some of the rice mixture into each leaf, rolled it up and closed it with a couple of toothpicks.

4. To the sauce I added some water and half of a vegetarian organic bouillon cube, broken up into tiny pieces because the organic ones do not melt easily. I then placed the the rolls in the sauce, spooned some of the sauce on top of the rolls, put on the lid and let them cook on rather low heat, for maybe 30 minutes. I kept checking and adding a bit of water when necessary.

These are not small rolls, as you may be able to tell from the photo, because those leaves are large, so each roll is about 4 to 4.5 inches long. I had no problem eating two, and am trying to hold out till dinner before I eat the other two!

I don't know if it's this variety of cabbage or the bay leaves that grow in my back yard and smell a lot like cinnamon, but whenever I combine this cabbage with those leaves, the result is yummy! It's a small shrub that grows right at the base of an olive tree, and I want to try to propagate it by cuttings, because I've never smelled bay leaves quite like it.

Food and art - Cibo e arte

How I keep myself entertained, besides cleaning muddy dog paws.
Come mi diverto, oltre a pulire il fango dalle zampette dei cani. 

In the last couple of days I've prepared olives packed in salt and Quince jam, both from my trees, made using recipes found online or passed along from a person in a shop to a friend to me. The jam is great, but as for the olives, time will tell.
Nei giorni scorsi ho preparato olive sotto sale e marmellata di mele cotogne, entrambe raccolte dai miei alberi e preparate seguendo ricette trovate su internet o riferite da un amica che l'ha sentita in un negozio.... La marmellata e` ottima, ma per le olive bisogna aspettare per saperlo.
As far as the art goes, I've been making a lot of mixed media pages in my homemade journal.
Per quanto riguarda l'arte, sto creando molte pagine in tecnica mista in un quaderno rilegato da me.

Planting and eating


Today, the 4th full day of working on the land around the house in which I hope to soon live, Sergio,  who has been doing all the hard work around there, pruned a large and not too healthy tree of uncertain variety. I say it's a plum tree, but I think he said it's an almond. He's most likely right, but that means that the two plum trees that grew in that area are gone. Too bad, they were delicious - one purple and one greenish-yellow. In any case, we will be leaving some of the lower branches, and when the time comes to graft, the taller ones will be cut and their base will be used for the grafting of some sort of fruit.
Oggi, la quarta giornata intera di lavori sul terreno che si trova intorno alla casa dove spero presto di vivere, Sergio, l'amico che mi sta aiutando con tutti i lavori connessi alla campagna, ha potato un grande albero in cattiva salute e di varieta` incerta. Io dico che e` un susino, ma credo che lui abbia detto che e` un mandorlo. Sicuramente avra` ragione lui, ma allora significa che i due susini che crescevano in quel punto non esistono piu`. Peccato, erano deliziosi - uno viola e uno giallognolo. In ogni caso lasceremo crescere i rami inferiori e quando sara` il momento per innestare, taglieremo i rami piu` alti e sul rimanente innesteremo qualche frutto.
Our main project for today was to start a garden behind the house, which will be an experiment because, as I mentioned yesterday, while it is close to the house it gets only three hours of full sun per day. In addition the soil is very compacted and there are a gazillion pine cones everywhere. Sergio admitted it will be a miracle if the onions make it in that hard soil. 
In the old days every farm around here (don't know if it's the same in other regions of Italy) had a bamboo patch which was used, among other things - what other things I don't really know - to make fruit  drying racks or wattles. I'm very lucky to still have one and I don't know what kind of bamboo it is, but it's definitely not invasive or spreading because that's where it is and that's where it's always been since forever. So I was instructed to go down there and collect a few canes, which is what I did. 
Il progetto principale per oggi era di avviare un orto dietro alla casa, che sara` sperimentale perche`, come ho scritto ieri, mentre e` vicino alla casa prende solo tre ore di sole pieno al giorno. Inoltre il terreno e` abbastanza compatto e ci sono un bilione di pigne dappertutto. Sergio ha ammesso che sara` un miracolo se le cipolle ce la faranno in quel terreno cosi` compatto. 
In tempi passati da queste parti ogni campagna aveva il suo canneto (non so nel resto dell'Italia) che veniva usato tra l'altro - ma non so cos'altro - per fare i graticci che servivano per essiccare la frutta. Sono fortunata perche` il mio esiste ancora e non so che varieta` di bambu` sia, ma non e` certamente del tipo invasivo o che si moltiplica all'infinito perche` la` sta e la` e` sempre stato. Quindi mi e` stato chiesto di raccogliere qualche canna e cosi` ho fatto. 
The method we used was neither Permaculture nor traditional, but rather a pinch of both and a simplified version of what Sergio has been doing on his farm years. I would have liked to do sheet mulching, but lacked sufficient cardboard and straw. Next plot will be with that method. 
First he used a rake to pull the previously cut grass to the side, so that it was in between the rows, and then he cut the bamboo into segments and used them to mark the rows - four of them, one each for fava beans, bush peas, white onions and red onions. 
Il metodo che abbiamo usato non e` ne` Permacultura ne` tradizionale, ma piuttosto un pizzico di entrambi ed una versione semplificata di quello che Sergio fa nella sua campagna da anni. Avrei voluto fare la pacciamatura a tappeto con il cartone e la paglia, ma mancandomi entrambi non e` stato possibile. Per la prossima zona che coltivo usero` quel metodo.  
Prima di tutto con il rastrello ha tirato da parte l'erba precedentemente tagliata, cosi` da ammucchiarla tra una fila e l'altra, e poi ha tagliato le canne e le ha usate per indicare le file - quattro in tutto, una fila ciascuna per fave, piselli, cipolle bianche e cipolle rosse. 
Then with a hoe he made holes in the first row for the fava beans. 
Poi con una zappa ha fatto buchi nella prima fila per le fave.
For the first two rows, favas and peas, into each hole he poured some ash from the bonfire (I've got plenty), then placed three fava beans or peas inside and closed up the hole. I had my doubts about the ash because I had recently read that it made soil too alkaline, but he said that this is what they always do at his place, so this soil must like an addition of ash. All I know so far about the soil here is that it has a lot of clay and iron in it - in fact, as you can see, it's red. 
Per le prime due file, fave e piselli, in ogni buco ha versato della cenere dal falo` dell'altro giorno (ne ho in abbondanza) e vi ha messo tre fave o piselli, richiudendo quindi il buco. Avevo i miei dubbi per la cenere perche` avevo recentemente letto che rende il terreno troppo alcalino, ma mi ha detto che da lui fanno sempre cosi`, quindi si vede che a questo terreno piace la cenere. Per adesso del terreno di questa zona so solo che e` argilloso e contiene molto ferro - infatti, come potete vedere, e` rosso
Next he watered. Eventually the house will be hooked up to the cistern again, but for the moment I have to pull water up with a bucket. Poi ha innaffiato. Prima o poi l'impianto idrico sara` di nuovo collegato alla cisterna, ma per adesso e` necessario tirare su l'acqua con un secchio.  
Then, with the "high-tech" tool I showed you yesterday, he made holes for the onions, but since that tool wasn't adequate he made a more professional one......
Poi con l'attrezzo "ad alta tecnologia" mostratovi ieri ha fatto dei buchi per le cipolle, ma siccome quell'attrezzo non era adeguato ne ha fatto uno piu` professionale.....
Whereas ash was placed into the holes for the favas, in the case of the onions a bit of ash was sprinkled on top of the rows.
Mentre per le fave e i piselli la cenere e` stata messa direttamente nei buchi, per le cipolle un po' ne e` stata cosparsa sulle file. 
When the fava and pea plants get to be about 3 inches tall,  I will cut strips of cardboard, make holes in them and place them over the plants. Then I will pull the grass which by then will be dry over the cardboard.  I know I will mound soil around the onion plants, but can't remember if I'm supposed to do the cardboard and grass thing or not. 
Quando le fave e i piselli saranno alte 7 - 8 cm. tagliero` delle strisce di cartone, vi faro` dei buchi in corrispondenza delle piantine e ve le mettero` sopra. Quindi prendero` l'erba, che a quel punto sara` ben secca, e la mettero` sopra al cartone e intorno alle piantine. So che intorno alle cipolle dovro` fare dei cumuli di terreno, ma non ricordo se devo fare la cosa con il cartone o no.

Of course we had to do just a bit more ivy removal and in the process discovered a fig tree inside it struggling to survive. 

Naturalmente abbiamo dovuto togliere un altro po' di edera e nel farlo abbiamo scoperto che dentro c'era un fico che cercava di sopravvivere.

Today six of the dogs showed up to eat. I hadn't seen them in a while. 
Oggi sei cani sono venuti a mangiare. Era un po' che non li vedevo.

Uno dei tre cuccioli sopravvissuti. Si sta facendo carino non vi pare? Io lo chiamo "Pecora".
When I got back home I was exhausted and made myself a tasty "peasant" meal with broccoli rabe (rapini) cooked with laurel leaves, tomato sauce and garlic, and a glass of organic red wine (had to order it online). And yes, my wine glass is a Nutella jar with Tweety Bird on it. 
Sono tornata a casa stanchissima e mi sono fatta un saporito pranzetto "contadino" con cime di rape stufate con pomodoro, aglio e alloro e un bicchiere di vino rosso bio. Ebbene si`, il bicchiere e` un barattolo della Nutella con Tweety sopra.

Going for walks, eating, feeding strays, eating.....Si fanno passeggiate, si mangia, si da da mangiare a cani randagi, si mangia....

Unfortunately my current internet connection will not allow me to upload any videos of a decent length, so this is the best I can do.
Today, before the daily 6 km. walk along country roads (my friends go every day, but I don't because I walk into town once or twice a day anyway), I went to a favorite local restaurant, "Da Gino", and ate two of their specialties: homemade spaghetti, with fresh tomato sauce and organic wild-foraged greens that the owner gathers every morning on his 25 hectare "masseria". On the side I had a dish of pureed of fava beans and potatoes on a bed of more wild greens. No wine, because of the long walk right afterwards.
I've been sleeping really well since I got here, that is when I don't wake up wondering if I will be able to afford fixing the house.
Sfortunatamente il mio attuale collegamento internet non mi permette di caricare video di lunga durata e questo e` il meglio che posso fare al momento.
Oggi, prima della passeggiata di 6 km. per le stradine di campagna (le mie amiche la fanno tutti i giorni, ma io no perche` gia` vado a piedi in paese una o due volte al giorno), sono andata "Da Gino", un ristorante locale bello e ben conosciuto, dove ho gustato alcune delle loro specialita`: spaghetti fatti in casa con sugo di pomodoro fresco e verdure spontanee e biologiche, raccolte ogni mattina dal proprietario del ristorante nella sua masseria di 25 ettari, e purea di fave e patate sopra altre verdure spontanee. Niente vino a causa della lunga passeggiata subito dopo.
Da quando sono qui la notte dormo profondamente, cioe` quando non mi sveglio che penso se ce la faro` economicamente ad aggiustare la casa....
